Hi, all! I am getting ready for my first ever "Healthy Thanksgiving" and I'm really quite excited! I am making most of the meal: turkey, my mother-in-law's cornbread/rice dressing that I am tweaking to use brown rice and no bacon grease, apple cranberry & walnut salad with yogurt and orange dressing, acorn squash from our garden this past summer, mashed with raisins & cinnamon, and my newly discovered recipe for pumpkin cheesecake which is fat free and has very little sugar in it. My daughter is bringing the famous green bean casserole which she is going to try to make with low-fat cream of mushroom soup. I am going to choose to eat small portions of everything and concentrate on the things I love, and leave the things I don't really care about. My sister in law will bring mashed potatoes and a very mayonaissy cabbage salad, but I think I will let those pass by altogether. My prayer is that I will be able to be truly thankful for the things I CAN have and not miss the things I can't have. I'm planning my strategy ahead of time so I can hopefully be successful and end my week on a high note!
