Here is an easy way to get a good serving of vegetables in....put them in an omelet. You can use regular eggs, but I prefer an egg-white product because it is much lower in cholesterol (and also lower in calories).
Grape Seed Oil (or Olive Oil) -- just a tad to coat frying pan Egg Whites -- I use 1 cup (4 egg equivalent) per "serving" Fresh chopped veggies. The ones I like to put together are: * asparagus (chopped) * broccoli (chopped, just the top, not the stem) * carrots (grated) * red Bell Pepper (chopped) * green Bell Pepper (chopped) *zucchini (grated) * 97% fat free turkey ham - 4 oz
Chop the turkey ham into small pieces and bake in microwave on high for about 5 minutes.
While it is cooking, chop other veggies. Put small amount of oil in pan (even if it is stick-free, because grape seed oil helps reduce cholesterol). Spread around pan and wipe off excess with paper towel. Turn flame on to Medium
Add the veggies and turkey ham. It should be so thick that the eggs barely hold it all together. Allow it to cook on medium flame until egg cooked...if necessary, flip the egg while cooking. Usually takes about 10 minutes to cook on my stove, but time may vary on yours.
==If you like, you can melt a tiny bit of melted cheese (preferably fat free on top).
