Banana Cookies
3 ripe bananas 2 Tbs veg oil 1/2 cup applesauce 2 cups oats (I use half quick oats and half rolled oats) 1 cup raisins, dates or craisins, or a combination 1 tsp vanilla 1/2 tsp salt 1/2 to 3/4 cup sunflower seeds or chopped walnuts
Mash the bananas, then stir in all the ingredients. Mix well and let set for 10 min. Drop by spoonfuls onto greased cookie sheet & slightly flatten. Bake at 350 degrees for 20 minutes. Cool and store in a tightly covered container in fridge.
2 cookies are about 150 calories depending on how big you make them.
Note: I added freeze dried apples last time to make them a little sweeter, yum! Also, you could probably add a little honey. Or try chocolate or carob chips, coconut, or other dried fruits.
We have several friends who can not have wheat gluten and they love these cookies!
